Mama Dub's BEST Tacos!

No Joke... the best tacos you will ever have.  I don't usually brag on my own recipes that much, but we loved these so much I felt that I wasn't even the one that made them. Strange as it sounds, they were just too good. Yeah, ok, I'm weird, but that's nothing new. 


The pics are a bit dark { just pretend they weren't taken at night around the dinner table without good lighting and no flash}. 


I slaved in the kitchen for 3 hours boiling a cabbage and removing the outer leaves every 10 minutes. I was attempting Stuffed Cabbage. Whatev. I don't care how good they may have been it was not worth the time in the kitchen.  I googled a better way to do it and they said that I needed to freeze the head of cabbage for 2 days. Blah! Since there wasn't time for that, not to mention I was sick of splashing boiling water on me every time the cabbage decided to fall out of the tongs and back into the pot, I settled on tortillas. By golly, I had those and they weren't going to burn me. 


I put my "stuffy" mixture into the skillet and browned the meat. I preheated the broiler on the oven and stuffed the tortillas.  I shredded some White Cheddar over the tops and placed them in the oven for about 2 minutes. Just enough time to melt the cheese and crisp the edges of the soft flour tortillas.  Sliced up a few limes and wa-lah!  That was dinner. Forget the cabbage leaves...


Recipe: Mama Dub's Tacos


Ingredients

  • 1 Bell Pepper chopped {I chose a little green and a little red}
  • 1 large white onion {chopped}
  • 1 tbs butter
  • 2 Cups cooked Orzo {1 cup uncooked Orzo turns into 2 cups cooked in case you were curious} 
  • 1 lb Ground Italian Sausage
  • 2 Boiled Chicken Breasts {pureed quickly in the food processor} 
  • 2 Stalks of Celery chopped
  • 1 Bag of Tortillas 
  • White Cheddar Cheese {grated or you can grate yourself. I prefer the later}
  • Ground Black Pepper
  • Salt
  • Garlic Powder
  • 2-4 Fresh Limes

Instructions

  1. Boil 2 chicken breasts. While they are cooking, chop your bell pepper and onion. Set aside and get your water boiling for your Orzo. Pull out a skillet while you are at it. 
  2. Melt your butter in the skillet and add your onion and bell pepper. Sautee on medium heat for 8-10 minutes stirring often. 
  3. Add your Orzo to boiling water and cook for about 8 minutes or until done.  Drain and set aside. 
  4. Once your chicken has boiled, drain and discard the water. Add your chicken breast to a food processor and quickly grind it. Don't over do it. You don't want mushy chicken. 
  5. At this point your onions and peppers are done.  
  6. Grab a big bowl and add it all. Peppers, Onions, Orzo, Chicken and Ground Italian sausage.  Add your dry seasonings. Mash it all together with your hands to help those flavors mingle. 
  7. In the same skillet that you sautéed your Onions and Peppers, place your meat mixture over medium heat and brown. Take a nice whiff of the kitchen and admire your work. 
  8. While your meat is browning, turn on your Broiler. Line a small oven safe dish with foil. 
  9. Add about 1/2 cup of cooked meat to each tortilla. 
  10. Grate your cheddar cheese over each Taco. 
  11. Place in the broiler for about 2 minutes. You want the cheese to melt and the edges crisp {not burnt}.  Remove from oven and place tacos on a serving dish. 
  12. Squeeze lime over tacos and ENJOY! 
I really can't stress how awesome these are. I'm pretty sure we would live on them. Yep. I'm sure we would.
