Grilled Zuchinni

This was a Pinterest inspired recipe, but of course I made it my own.


WHAT YOU NEED:
A Zuchinni per person {I used 3}. I chose two larger ones for the hubs and I and one small one for Kyah.
Bell Pepper {I chose yellow and red}
1/4 Red Onion
Cheese {I chose to use provolone}
Salt & Pepper to taste.

HOW TO:
It's really one of the easiest things you can make. Simply slice the zucchini in half length wise. Scoop out the insides with a spoon. Dice up your veggies for the insides, which by the way can most certainly be substituted for anything your little heart desires. Tomatoes, Olives, Mushrooms, Carrots, etc. Add all of your ingredients, sans cheese, to a sauté pan. Cook on medium heat for about 8-10 minutes. This will help the flavors mingle and the veggies to soften.

Once the veggies are cooked, fill your Zuchinni boats and top with cheese. Take em' out to the grill and cook for an additional 10-15 minutes. More than likely you will have some other awesome goodie on the grill. You can leave it on the grill as long as the other items take to cook, just be careful not to overcook and burn.

We made the same recipe from Pinterest! I did the same except I used parm-, which was great, but provolone, but provo- sounds delish!
