Pastrami and Ricotta Cheese on Ciabatta

I'm not normally a sandwich lover, but I decided a few weeks ago that I would branch out and try a few. This one had me at hello! It was easy, healthy {uh uhm... for the most part} and was perfect for summer. Don't tell anyone, but we actually ate these for dinner. 

Pastrami and Ricotta Cheese on Ciabatta

WHAT YOU NEED: 
1 Package Pastrami
1 Red Bell Pepper
1 Onion
Living Butter Lettuce
Ciabatta Rolls from Bakery
Fresh Curled Leaf Parsley
1/2 cup Ricotta Cheese
*salt
*pepper

HOW TO:
Chop fresh parsley and add into ricotta cheese. Salt and pepper lightly.

Slice onion and bell pepper in very thin slices.
Spread cheese on ciabatta roll and add all other ingredients.

{I served ours with organic sweet potato fries browned/heated in a skillet}.

And for those of you that are curious why you never see tomato on anything... it's because they make me gag {to put it nicely}. Haha.
